Sometimes my egg whites omelets are picture-perfect. And sometimes they just spill all over my plate in chicken-y, avocado-y, salsa-y goodness.

My breakfast omelet explodes with turkey bacon, avocado, salsa and a little cheese :)

Another Monday; another return to clean eating.
Oats with apple butter and flax for breakfast, a scoop of whey for snack, and scrambled egg / whites with avocado, salsa and cilantro for lunch :)

I started with this, and was already excited enough (health tip! mix avocado into your canned tuna instead of mayonnaise for creamy deliciousness and nutrition!) but then I added salsa and a little light cheese wedge and it became my new favourite snack.
When my carbs go back up, I’m spreading this happiness all over crackers, but until then, a fork will have to do :)

3/4 cup egg whites, 1 whole egg, 1 light laughing cow cheese wedge (35 calories), wild leeks and salsa with avocado on the side.  I’ve been mixing in some ham when I have it available, too :)
