Sometimes my egg whites omelets are picture-perfect. And sometimes they just spill all over my plate in chicken-y, avocado-y, salsa-y goodness.
My breakfast omelet explodes with turkey bacon, avocado, salsa and a little cheese :)

Oats with apple butter and flax for breakfast, a scoop of whey for snack, and scrambled egg / whites with avocado, salsa and cilantro for lunch :)
This has been my breakfast most mornings since arriving in Vegas: 1½ jumbo eggs, ½ cup egg whites (scrambled in coconut oil), 30g avocado, 2 slices of turkey bacon and some Trader Joe’s roasted tomato salsa :)
1 whole egg
3/4 cup egg whites
5g coconut oil
2 TBSP salsa
1 laughing cow light cheese
40g avocado
290 calories; 8.6g carbs; 30.6g protein; 14.8g fat
Just ‘cause I haven’t posted any in a while - I’m still eating Clean Pancakes on the regular :)
Seriously my favourite meal right now, for breakfast, lunch or dinner.
3/4 cup egg whites, 1 whole egg, 1 light laughing cow cheese wedge (35 calories), wild leeks and salsa with avocado on the side. I’ve been mixing in some ham when I have it available, too :)
